Groundhog Day Recipes

In our household, one of our favorite ways to introduce holidays to our young daughter is by incorporating crafts and activities related to the holiday. The most delicious way of doing this is by creating or using recipes related to the holiday.

Groundhog Day is a North American holiday held on February 2. The premise is that the groundhog will emerge from his hiding place and come out to check to see if he can see his shadow. If he can, he retreats to his burrow and winter will allegedly continue for 6 weeks more. If he cannot, he will leave the burrow and winter is considered to be over.

Unlike many other holidays, there is not an abundance of viable recipes for Groundhog Day. However, one great way to introduce this concept to a young child is by having a breakfast related to Groundhog Day. First, we make toast using any type of bread that we have available and wish to make. Then, for the second part of this Groundhog Day recipe, an adult cooks eggs sunny side up. Our daughter cuts out a hole in the center of the toast (a circular cookie cutter works very well for this) and places it over the top of the egg. We then discuss how the groundhog arises from his burrow. We also use this is a learning moment and discuss the importance of the sun to shadows. As a simple recipe for Groundhog Day that does not utilize a lot of extra or unhealthy ingredients, Groundhog Day Toast and Eggs is a favorite in our household.

For a more treat-like Groundhog Day recipe, we make cupcakes and create a groundhog on top. For this, we use a small candy bar (fun size will not work, as it is too small, but a full size is obviously too large, so you need to use the in-between size for this recipe). We stick one in a pre-baked cupcake. Then, we use frosting to decorate a small face on the groundhog. For a bit of extra fun, you can use a flashlight and demonstrate the sun behind and in front of the groundhog to show the shadow. The cupcake can be any flavor, as can the candy bar, per taste. This Groundhog Day recipe is relatively simple to create and can be as creative as the maker would like.

Groundhog Day is an often overlooked holiday, but these recipes provide a quick and easy way to celebrate in a delicious way.

    Interesting... Feb. 2nd is also the birthday of James Joyce. I used to make Groundhog Day/Joyce birthday cards (with Joyce quotes) for friends.
