Growing Vegetables in Alaska

Alaskans have many of their vegetables imported because vegetable growing in their state can be a challenge. However, it is not impossible to produce certain type of vegetables even in cold climates. Some areas of Alaska are warmer than others, and plants can also be grown in green houses. In addition, vegetables can also be grown during the long days of spring and summer despite the relatively short growing season.

Potatoes

Potatoes grow well in Alaska, even when there is a chill in the area. These vegetables flourish during the spring and summer months. They are harvested throughout the summer and crops begin to die off when fall sets in.

Carrots

Like potatoes, carrots also grow underground and pop up through the soil. Carrots are excellent Alaska vegetables because they can be harvested over a long period of time. Water and plenty of sun is needed to grow healthy carrot crops so they flourish in the spring and summer. Carrots are rich in beta carotene (vitamin A) and other nutrients such as calcium, vitamin C and other minerals.

Beets

Beets are also very hearty vegetables with a high survivability rate, making them excellent vegetable plants for Alaska growers. Beets look similar to red potatoes on the outside, but the inside is red flesh. This vegetable is very high in vitamin A, C and other nutrients. Beets can grow year round in some climates, but they only grow in the spring and summer months in Alaska.

Other vegetables such as tomatoes, cabbage, zucchini and string beans along with lettuce can also grow in Alaska. The potential for these and other varieties to grow vegetables have the potential for these vegetables and other varieties to grow depends on weather conditions and care. Raised beds in a greenhouse environment may be necessary. Raised beds are plant beds that are raised up from the ground in wooden boxes. The boxes are filled with soil and plants.

Turnips

Turnips also called Rutabagas grow well in Alaska during the growing season. This vegetable looks like a combination of a radish and a potato. Turnips are high calcium as well as vitamin C, A and E. These vegetables are also a great source of fiber which is helpful for healthy digestion.
