While driving past 531 North Wells Street in Chicago's River North neighborhood, I was hoping to find that the space would have been occupied by now. My co-workers have been discussing the opening of the new GT Fish & Oyster for months now, but it's still not open. Older reports noted that the establishment would open by October of 2010, but according to the Boka Group, it will open in February of 2011. The Boka Group, which is headed up by Giuseppe Tentori also developed other trendy food establishments such as Landmark, Boka, Perennial and The Girl & The Goat, the restaurant operated by celebrity chef, Stephanie Izard.

Prior to being the new home of GT Fish & Oyster, 531 North Wells housed Tizi Melloul, the Brown Dog Tavern and Grand Wells Tap.The "GT" in the restaurant's name, stands for Giuseppe Tentori, of course, and the company that designed the space, 555 International, is the same one that designed The Girl & The Goat.

In addition, GT Fish & Oyster will be the first restaurant owned by The Boka Group that will serve lunch. It will also feature a summer patio and include "Kings Table" that will accommodate up to ten people. I'm looking forward to trying the lobster roll that is slated to be on the menu, and I'm thinking that it will be worth the wait.
