Ingredients

Serves 4
2 cups cooked diced shrimp
2 cups cooked mashed sweet potato or yam
1 cup diced sauteed scallions
1 cup diced sauteed red bell peppers
2 tbsp garlic powder
2 tbsp onion powder
1 tsp cayenne pepper
1 tsp sea salt
2 eggs

Mix All Ingredients
Combine all ingredients just like you were making a meat loaf

Form into Balls, Dust With Flour and Flatten Into Patties
Make the patties as thick or as thin as you like.

Brown In OIl In Frying Pan Over Medium Heat
Brown lightly ... about two minutes on each side. Serve with a salad, on a bun with lettuce, tomato and your condiment of choice, or on bread or a roll as a sandwich. The patties also make an excellent side for egg dishes.
