Halloween is a fun time and dinner needs a little flair. I have a few recipes that add a little fun to dinner on this special holiday.

Spider Pizza

Pizza dough

3 tablespoons extra virgin olive oil

6 tablespoon ketchup

1 teaspoon oregano

3 tomatoes, diced

6 oz frozen corn

8 oz mozzarella cheese, shredded

Black food coloring

12 cherry tomatoes

1 red pepper, cut into strips

5 tablespoons ketchup

Roll pizza dough into 12 round pieces about 5" in diameter. Put on oiled cooking sheet. Spread dough with a thin layer of ketchup, oregano and any remaining oil. Sprinkle with diced tomato, corn and cheese.

Cook 10 to 15 minutes. Let cool.

Color remaining ketchup black with food coloring and put into piping bag. Make spider web designs across the pizza with the ketchup. Cut stem off cherry tomato. Put four strips of red pepper to look like legs on the middle of pizza and put tomato in center. Using black food coloring make little eyes on the tomato to look like a spider.

You can do this with one large pizza but it is more effective with smaller sizes.

These are both cute and tasty.

Spooky Chicken Fingers & Teeth Fries

This is pretty easy. Before you cook just cut chicken fingers to look like fingers and cut the French fries to look ragged like teeth. Once cooked, dip the chicken finger tips in ketchup to look like fingernails. Serve with French fries. If arranged well this is a spooky meal great for children.

Pumpkin Casserole

2 ½ cups water

2 tablespoons lemon juice

Salt to taste

2 lbs pumpkin, seeded, peeled

3 cups long grain rice

1 lb sausage, skinned and cut in slices

3 tablespoon bread crumbs

1 tablespoon milk

1 cups cheddar cheese, shredded

1 tablespoon butter

Preheat oven to 425 degrees Fahrenheit. In a saucepan bring to a boil water, lemon juice and salt. Add pumpkin and boil for 40 minutes.
Drain pumpkin. Arrange layers of pumpkin, rice, sausage in baking dish. Sprinkle with bread crumbs and cheese. Put a little bit of butter around it and cook for about 15 minutes until it is a golden brown.

Everybody loves pumpkins on Halloween and this fits the occasion perfectly.

Pumpkin Bacon Soup

2 lbs pumpkin, peeled and seeded (or you can use canned pumpkin)

1 onion, chopped

1 ½ cups carrots, diced

1 celery stalk, diced

1 tablespoon sesame oil

1 teaspoon curry powder

1 tablespoon flour

4 cups chicken broth

½ lb of bacon, trimmed and diced

Salt to taste

Ground pepper to taste

Nutmeg

Combine pumpkin, onion, carrots, celery and oil in a large saucepan. Stir fry for about 5 minutes Add curry powder and then flour.

Puree mixture in a blender and put in a soup pot.Fry bacon and heat up soup. Put bacon pieces in soup. Simmer for about 5 minutes. Garnish with nutmeg. I eat this all year round but it is perfect for Halloween.
