Halloween Recipes: Goblin, Pumpkin, Pudding and Rum Treats

As we are quickly approaching the fall months and Halloween, there are so many good recipes for treats that are quick, easy and low-fat. Below are some creative ideas to help you cook full of flavor without packing on the calories or pounds.

Goblin Gooey Rice Crispy Treats
6 Cups of Rice Crispies (I use generic brands and they still turn out excellent)
4 Cups of jet puffed mini marshmallows
4 TBSP Light margarine (or butter)
6 TBSP of Butterscotch morsels
Slowly heat the mini marshmallows and margarine over low-medium heat. Once heated (marshmallows will be dissolved) add the rice crispies and butterscotch morsels. Stir thoroughly and transfer to a 9 X 13 baking dish. Allow to cool for a few minutes, and then cut into 18 rice crispy bars.
Note : If you would prefer, you can substitute the butterscotch morsels with chocolate chips, cherry chips, heath bar bites, candy corn, crushed candy, m&m's, etc.

Chocolate Chip Pumpkin Cupcakes
1 Can of Pumpkin Puree
1 Box of chocolate cake mix
1/2 Cup of Water
Preheat oven to 350. Mix all three ingredients together. Divide into 24 equal cupcake tins and heat in oven for 20-25 minutes.
For an added kick, add 8 ounces of chocolate chips.
If you would like a topping, you can use regular icing or cool whip. This is a lowfat recipe, so I mix 1 tub of Cool Whip Free with 1 packet of pre-made sugar free pudding and ice the cupcakes.

Pudding Parfaits
2 Boxes of sugar free chocolate pudding mix, prepared
2 Boxes sugar free butterscotch pudding, prepared
2 Tubs of Chool Whip Free
1 can of lite, no sugar added Cherry Pie Filling
6 Large, Crushed Graham crackers
Prepare all pudding if not already done. Mix 1 tub of Cool Whip Free in each bowl of pudding
Place half og the graham crackers at the bottom of a large trifle bowl. Top with half of the chocolate pudding-Cool Whip mixture , then half of the cherry pie filling, followed by 1/2 of the butterscotch pudding-Cool Whip mixture. Repeat all 4 layers. For an added zest, add a candy topping (if desired).

Ghoulishly Good Rum Drinks
1 Packet of sugar free Hawaiin Punch mix (these come in single servings plastic tubes - You can pick up a box of 8 or 10 of them at Walmart.)
16 Ounces of water
1 Shot of rum
Ice Cubes
Mix Hawaiin Punch mix and water together thoroughly. Add in the ice. Pour in 1 shot of Rum and enjoy!
Note : You can make this recipe with any of the sugar free drink packets (i.e. cranberry, any juice flavor, etc).

    Great ideas! I think kids will really like the cupcakes and crispy treats.
