Halloween Scary Berry Chocolate Cake Recipe

The Halloween Scary Berry Chocolate Cake is an amazing moist chocolate cake recipe that is filled with raspberry sauce and white chocolate mousse and iced with a delicious chocolate cream cheese. Ingredients for Halloween Scary Berry Chocolate Cake
1 ¾ cups all-purpose flour

2 cups white sugar

¾ cup unsweetened cocoa powder

2 tsp baking soda

1 tsp baking powder

1 tsp salt

2 eggs

1 cup strong brewed coffee

1 cup buttermilk

½ cup vegetable oil

1 tsp vanilla extract

5 oz frozen raspberries, thawed

1 tbsp white sugar

1 tbsp orange liqueur

¾ cup and 2 tbsp heavy whipping cream

3 oz white chocolate chopped

4 squares of unsweetened chocolate

1 8 ounce package cream cheese

4 cups confectioner sugar

1 tbsp vanilla extract

1/8 tsp salt

2.5 tbsp heavy cream

Directions for Cake for the Scary Berry Chocolate Cake Recipe

Preheat oven to 350F

Grease and flour two 9 inch round cake pans

Combine flour, sugar, cocoa, baking soda, baking powder and salt in a large bowl. Form the mixture into a volcano in the middle of the bowl.

In a medium sized bowl beat together the eggs, coffee, buttermilk, oil and vanilla, until mixture is thin, and pour it into the middle of the volcano.

Beat the egg mixture and the cake mixture for 2 minutes on medium.

Pour the thin mixture into the two 9 inch greased pans.

Bake the cakes at 250F for 40 minutes, check the middle of the cake with a toothpick, and make sure it comes out clean.

Cool the cakes for 10 minutes and then remove from a pan and let cool on a wire rack for a minimum of 30 minutes.

Directions for Raspberry Chocolate Filling for the Scary Berry Chocolate Cake Recipe

Place the berries in a blender and blend until the berries are smooth. Strain the raspberry mixture over a small bowl and get rid of the seeds.

Add the white sugar and orange liqueur, and stir until the sugar has dissolved. Should make approximately ½ cup of sauce. Set aside.

In a small saucepan on low heat, heat up the 1/8 cup of the whipping cream and white chocolate, constantly stirring until the chocolate melts. Remove from burner and let the mixture cool until it is lukewarm.

Stir in ½ tbsp of the raspberry sauce, and transfer into a large bowl.

In a medium bowl whip the remaining cream to soft peaks. Fold the whipped cream into the chocolate mixture, small amounts at a time.

Set in refrigerator.

Directions for Chocolate Cream Cheese Icing for Scary Berry Chocolate Cake

Melt the chocolate in a double boiler

Beat the cream cheese in a large bowl until fluffy. Pour the melted chocolate into the cream cheese mixture and use a mixer on medium speed to blend the two together.

Add vanilla and a small pinch of salt. Mix the confectioner sugar in slowly.

Increase mixer speed to medium high, and slowly add the heavy cream until the mixture is a frosting consistency.

How to put Halloween Scary Berry Chocolate Cake Together:

Place one of the 9 inch cakes on a cake platter or plate

Spread the white chocolate mousse on the top of the cake

Spread the raspberry sauce over top of the white chocolate mousse

Place the second cake on top of the white chocolate mousse

Gently squish the cake down

Spread the frosting over the cake and around the sides

Top with your favourite Halloween Candy (candy corn, mini pumpkin marshmallows, orange/black sprinkles, Halloween confetti, etc)
