Hanukkah Recipes for Vegetarians: Grandma's Potato "Latkes"

(Delicious Potato Pancakes)

(This recipe is good for "lacto-ovo-vegetarians" - those vegetarians who do not eat animal flesh, fish or shellfish but do eat eggs and dairy. This is the most common type of vegetarian in the United States.)

Once upon a time, among a little girl's first memories was the memory of tasting her grandma's potato pancakes. Mmmm good! This is a traditional Hanukkah season favorite, not only for vegetarians but for everyone! And of course, the little girl was me. "Latkes" is the Hebrew word for pancakes. These are made from potatoes, not wheat. Hanukkah this year is not until December 21. So you have plenty of time to get your potato grater ready!

5 cups grated white potatoes

1 large grated onion

3 eggs, pre-beaten

3/4 cup matzo meal*

1 teaspoon or more salt(to taste)

Ground pepper (to taste).

*Matzo meal - The label may say "Cake Meal" - you can usually find this in the ethnic section of your grocery store by either the Manischewitz or Streits brand name.

Hand or process-grate the potatoes. Drain.

Grate the onions. Drain. Add to potatoes.

Add other items.

Heat 2 tbsp. oil in a frying pan until bubbling.

Form hamburger-shaped patties in a size of your choice and drop into pan.

Fry until golden brown, flip and do same.

Drain on paper towels.

These are delicious topped with either a choice of sour cream, applesauce or ketchup. You can also make these the easy way - Streits has a box of ready-made Potato Pancake Mix!

    Mmmmm, delish!!! I am very partial to the applesauce on top! But dinner? HAH! They are great anytime. (Matzo-brie (soaked matzo mixed with eggs) on the morning after Pesach!! There is another good recipe.)

    When my daughter was in preschool, one of the moms made "latkes" that were really heated hash brown patties. My daughter loved them and asked me if I could make latkes that way from now on.
