It has been almost three years now, but I can still taste it ... Marlon, fresh from the Sea of Cortez, filleted and grilled to perfection and served with fresh, local vegetables. We had a five course meal prepared just as we requested. We gorged ourselves until we were more than satisfied, then back to the hot tub for another glass of wine while we watched the reflection of the moon on the surf. By the time we went back inside, our villa's kitchen and dining room were spotless. My guests, all six of them, went back to their condos; my family and I headed off to bed. It had to have been one of the most wonderful nights of my life.

Such was our experience with a Floating Chef in Cabo San Lucas, Mexico. Cabo is now a large, bustling resort community, as famous for the warm sand beaches, gentle breezes and magnificent Pacific surf as for the five star resorts and timeshare condominiums that sprawl across the tip of the Peninsula and continue to grow up the sides. Perhaps one of the most popular activities in the area is Marlon fishing. Naturally, we gave it a try.

Although I didn't actually fish myself, I joined my friends on the boat and cheered them on as, strapped onto permanently affixed seats at the rear of the boat, my cousins caught their first "big fish" (both just over 300 pounds that day) and, competing with one another, they refused assistance from the guides. But what does one do with such a trophy? In Cabo, they have an answer. The fish was taken to be cleaned and packaged for shipment home ... the finer parts expertly filleted and wrapped for us to enjoy there and then. Now the only question was who was qualified to cook the prize dinner. Certainly not I!

That is when we were told about Cabo's famous "Floating Chefs". We immediately took advantage, and we were so glad we did. Our chef, professionally trained in both Japanese and Mexican cuisine, came to our condo on the Baja Peninsula's South-Eastern shore, and prepared our catch and our meal right there in our suite while we relaxed around the pool. He went to the store for us, picking up everything he needed to prepare the most magnificent dinner, then came and prepared this masterpiece right there in our room while we told and retold fish stories to anyone who would listen. He then served us, all nine of us, right there in our villa, the most sumptuous international meal I have ever had. More wine? He poured it. Next course? He served it. Desert? More desert? He was there as we laughed, relaxed and enjoyed.

And when we were done, back to the hot tub as the families finally gave way to exhaustion and satiety and headed back to their rooms. Finally, we, too, were ready to turn in, and back inside we strolled. Oddly, it was like nothing had happened in that room, no five course meal prepared, no nine people at a dinner party, nothing ... All was as clean as the day we checked in. Our chef had taken care of everything so that all we had to do was crawl into our beds and drift off to sleep to dream of the day all over again.

And the price for all this luxury from our floating chef? ... Just $14.00 per person. No, you're right ... priceless! More than anything else, I want to go back to Cabo ... for the Floating Chef!
