One of the first things that should be done plan the meal ahead of time. A person will want to shop around first for the prime rib for price and availability. Some small towns and cities have butcher shops or local grocery store willing to help with the purchase of a good prime rib that will fit your needs.

When looking for a prime rib remember to get the small end of the prime rib for the more tender meat with counting how many ribs you will need. Look for good color and texture of the meat.

Once you have found the perfect prime rib you should have them wrap the meat in butcher paper for storage, if you are not going to use the ribs with in a day of purchase.

It is not recommended to freeze the prime rib as there are some agents that dry meat out over a short period of time when freezing meat. Having a fresh prime rib is the best for taste and tenderness.

Recommended if the prime rib needs to be frozen to wrap with saran wrap tightly, foil then with good freezer paper tightly wrap to assure the mean will not be freezer burnt or dried out. The day before the dinner you will want to take out the rib from the freezer and place in the refrigerator still wrap and untouched to keep the moister in the rib.

To store the prime rib for over a few days, unwrap the rib from the butcher paper and wrap saran wrap around the rib a few times making sure the rib is completely enclosed with the saran wrap not to allow air to enter the rib. Wrap once with foil paper and rewrap with the butcher paper. Place in the refrigerator in the coolest area, towards the back. Leave wrap and do not open till the time to cook.

The rib will discolor some and might have slight odor, with good seasoning and proper cooking this will give a delicious tasting tender prime rib. Small amount of rosemary, salt and pepper is a perfect combination for prime rib before cooking.

May be the butcher or grocery store can order the prime rib which then you can pick up a day or on the day of making the prime rib dinner.
