These tempting muffins incorporate two of Hawaii's delicious products, pineapple and coconut. They are based on the Basic Muffin recipe found at:

Hawaii's Pineapple Cream Muffins
1 Recipe Basic Muffins
¼ teaspoon nutmeg
½ cup cream of coconut
1 can (8oz.) crushed pineapple in juice, drained
½ teaspoon vanilla extract
Prepare muffin recipe as directed except add nutmeg to dry ingredients.
Omit milk and add cream of coconut.
Add pineapple and vanilla to liquid ingredients.
Makes 1 dozen, about 175 calories each.
