Healthy 4th of July Dessert Recipes

Being festive is fun! Fourth of July is a great time to get together with friends and family to celebrate our independence and show your patriotism. When searching for the perfect party entertainer, desserts are always a top on the list. However, you don't have to make cakes, pies and cookies to create a stunning, yummy dessert that the crowd will love. Healthy, summer recipes are always nice to make. The following recipes are easy and fun to make, healthy and yummy to eat!

*Red, White and Blue Fruit Salad
2 cups blueberries
2 cups diced strawberries
2 cups diced apples
2 Tblsp. sugar

After all of the fruit has been diced, mix it together with a splash of lime juice and refrigerate until well chilled. Add two tablespoons of sugar to create a juice from the fruit. This mixture is great on its own or you can serve it over fresh vanilla ice cream. Top with a dollop of whipped cream for added flavor.

*Poppin' Pretzel Rods
10 large pretzel rods
White chocolate
Red, white and blue sprinkles

Melt the chocolate over a double boiler until thoroughly melted. Dip the pretzel rods into the chocolate. You can dip the tips or dip them over half way. Immediately after the pretzel rods have been dipped into chocolate, add the colored sprinkles. Set upright into a glass in the freezer until the chocolate has hardened.

*Fun Fourth Skewers
Cubed pound cake
Strawberries-cut in half
Blueberries

On a wooden skewer, alternate halved strawberries, blueberries and cubed pound cake. Place the skewers on a festive serving tray and place a bowl of strawberry or blueberry yogurt dip in the center of the tray.

*Berry/Yogurt Parfait
Strawberries
Blueberries
Strawberry yogurt
Blueberry yogurt

In a parfait glass, layer the fruit and yogurts. Begin with a layer of yogurt in th bottom of the glass and add a layer of berries. Continue until the glass is full.

*Chocolate dipped strawberries with blueberry accents
Strawberries
Blueberries
White chocolate

Melt the white chocolate over a double boiler until thoroughly melted. Do not scorch. Dip the strawberry half way into the chocolate and place on a sheet of waxed paper to harden. Once the strawberries are all dipped and hardened, place in a large serving bowl. Add fresh blueberries to add color and garnish. This is a dessert that is sure to be gobbled up!
