1 cup wheat bran
1/2 cup quick oatmeal
½ tsp salt
¼ tsp cinnamon
¼ tsp nutmeg
1 1/4 tsp baking soda
1 1/2 tbls grated orange rind
1 cup chopped baking apples
½ cup raisins
½ cup chopped walnuts
¾ cup orange juice
2 cups buttermilk
1 egg (beaten)
½ cup honey or molasses
2 tbls vegetable oil
In a large bowl, mix (with large spoon) dry ingredients: flour, bran, oatmeal, salt, cinnamon, nutmeg and soda. Add orange rind, apples, raisins and walnuts and mix well. Mix liquid ingredients: orange juice and buttermilk (stir lightly), then add egg, honey and oil and mix. Add the liquid mixture to the dry ingredients and stir lightly (mixture will be lumpy). Fill paper muffin wrappers or greased muffin tin two-thirds full and bake at 350 degrees for 25 - 30 minutes. Makes approximately two dozen muffins.
