Healthy Chicken Salad with Raisins and Apples:A Super-Bowl Treat or Anytime Super Treat

When my husband and I owned our Natural Food restaurant, one of the most favorite and ordered items on our menu was our HealthyHome Made Chicken Saladsandwiches and Chicken Salad Platters...

Our customers used to rave about it and always wanted to know the recipe...it's funny because this chicken salad is really so easy to make and made according to taste...some people want more apples, others more raisins...when I make it at home I really do not use the exact measurements so the ingredients I'm listing below can be changed according to your own taste buds, but basically, this is a good way to start...you can serve about 4 people with this recipe...I once doubled this amount for a Super bowl party we had, I put the chicken salad into a bowl with a platter of Pita bread cut into triangles...it was the biggest hit of the party!

So without further ado, here is our special Healthy Apple Raisin Chicken Salad...

All you need is cooked chicken, one apple, raisins, mayonnaise and cinnamon.. Salt if desired

Two cups chicken cut up in small pieces, dark or white meat...that could come from left- over chicken or just quickly grill two chicken breasts, seasoned with salt to taste.

To that you add ΒΌ cup mayonnaise more or less to taste...I use low-fat mayo, but not fat free...

One handful raisins,

One whole apple cut up in small pieces, peeled...but you can use an unpeeled apple should you choose to.

One teaspoon cinnamon...but you might like a bit more.

Mix well, and then refrigerate one hour or more if the chicken was just cooked...

All of these ingredients can be adjusted to your taste...personally I like a lot of cinnamon and raisins so I usually add more then stated above...

Serve over mixed greens, tomatoes and whatever other veggies you like or with your favorite bread...I love to just fill up a Pita pocket and dig in....

Use either low-fat or regular mayonaisse...this is a very healthy way to eat your chicken
