Healthy Christmas Candy Recipes

These recipes are my absolute favorite holiday candy ever!! The very best part about these treats is they are healthy and you can eat them, love them, enjoy them, and be totally guilt free!! I hear you already asking, "How can I eat delicious candy guilt free?" The answer: these awesome confections are made from real organic whole foods, nothing more, nothing less. When food is real ( not processed, isolated, chemically created, etc. ) your body is able to digest, process and actually gain nutrients and energy from ingesting it. Now isn't that a refreshing idea?

Have fun, be creative with these recipes. You can use cutters to make the fudge into various shapes after it has hardened in the refrigerator for several hours. If you have children in your home, have them help you, they will have so much fun making and eating the candy. Remember, it's all real, whole food and healthy!! Happy Healthy Holidays.

Blonde Fudge
Makes about 15, 1oz pieces
1 cup young coconut meat
3/4 cup cashews, soaked
1/2 cup date paste ( dates and water blended to thick paste )
3/4 cup irish moss gel ( 1/2 cup irish moss blended w 1/2 cup water )
1 cup cashew flour
6 TBS cacao butter, melted
1 cup coconut sugar, powdered ( low glycemic ) or powdered rapadura
1 TBS vanilla powder
1 tsp liquid lecithin
dash salt

In a blender blend coconut meat, soaked cashews, date paste, vanilla, irish moss gel. When smooth and thick blend in lecithin and cacao butter, just long enough to mix well. Remove to bowl and using an electric hand mixer add the coconut sugar and cashew flour. Blend until smooth. Line a small glass pan with parchment paper and spread the mixture in and smooth it out. Cover and refrigerate or freeze overnight. Will keep 3 weeks in the refrigerator or 3 months in the freezer.
Variation: You can add chopped nuts to the mixture before you put it in the pan, or add some liquor flavor such as Baileys Irish cream. The carmel Baileys flavor is the best. You can also swirl this blonde fudge into a batch of the fabulous fudge.

Easy Fabulous Fudge
Makes about 30, 1 oz pieces
1 cup coconut meat
1 cup nuts, cashew, pecan or both
1 cup dates pieces and prunes
1/2 cup irish moss gel
6 TBS cacao butter, melted
2 cups cacao powder
1/2 cup lucuma powder ( optional )
1/2 cup agave
1 TBS vanilla powder
1/2 cup coconut sugar, powdered or powdered rapadura
dash salt
Flavors:
peppermint oil, orange oil, grate ginger and lemon zest, cayenne pepper, substitute coconut oil for the cacao butter.

Soak the nut, dates and prunes in water until soft. Drain and blend with the agave, coconut meat irish moss and a little water if needed to turn over. Add the cacao butter and blend just a few seconds. In a large bowl Mix salt, vanilla powder and cacao powder together, then add the date mixture and stir until well blended. Line a 7" x 9" glass pan with parchment paper and spoon mixture in. Smooth the top by wetting you hand and then pressing down the mix. You can add some ground cacao nibs to the bottom, middle or top if you like for more real cacao flavor.
