Healthy and Delicious Pancake Recipes

It is so important for people to eat healthier. It's hard when healthier foods don't usually taste so great. It's important to keep an arsenal of healthy recipes that also taste good on hand, especially for when you have hungry kids to feed but don't want to give them any old food. Here are a few of my delicious yet very healthy pancake recipes. I use these every time I want to make some pancakes for my family. They taste good, are healthy and most importantly, the kids don't even know that these pancakes are good for them!

Oatmeal Applesauce Pancakes

To make this recipe even healthier you can add fruit to it. Try blueberries for a yummy kick! You can also serve them along with bananas or strawberries. Either way, they are delicious with or without the extra fruit.

This recipe makes enough for 6-8 servings.

Ingredients:

1/2 cup all-purpose flour

1/2 cup whole wheat flour
1 cup oats quick or old-fashioned
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/4 cup milk
1/3 cup sugar
1 cup applesauce
4 egg whites
2 tablespoons canola oil

In a large bowl, mix together the flours, oats, baking powder, baking soda and salt. Add all remaining ingredients and mix well. Let the batter set at least 5 minutes to soften the oats. Heat a frying pan on medium-high heat and coat well with cooking spray. Add 1/4 increments of batter to frying pan at a time.

When the edges of the pancakes appear dry and bubbles are forming on the surface, flip the pancakes and cook other side until golden brown.

Yogurt Pancakes

This is a great recipe to have on hand. It is very versatile. You can use any flavor yogurt to keep things exciting and fresh! It's fun to experiment with yogurt flavors. I use organic yogurt, but you certainly don't need to do so!

This recipe makes enough for 6-8 servings.

Ingredients:

3/4 lb whole wheat flour
3/4 cup white flour
1/4 cup sugar
1 teaspoon salt
2 teaspoons baking powder
1 teaspoon baking soda
1/2 tub (16 ounces) any flavor organic yogurt with enough milk to equal 2 2/3 cups.
1/8 cup canola oil
2 eggs
1 1/2 tablespoons vanilla extract

In a large bowl, stir together dry ingredients. In a separate bowl, mix together remaining ingredients, add all at once to flour mixture, stirring just until blended. Let rest five minutes. Preheat your frying pan or griddle on medium-high heat and spray with cooking spray. Using 1/4 cup, measure onto hot frying pan or griddle.

Whole Grain Blueberry Pancakes

This recipe is very good and very healthy. You can feel free to substitute any fruit you want for the blueberries. It doesn't necessarily have to be blueberries. I've even used bananas, strawberries and raspberries when making this and they turned out just fine!

Ingredients:

3 cups whole-grain spelt flour
1 cup oat bran
1 cup wheat bran
2 teaspoons baking soda
1 teaspoon salt
4 cups soy milk (or cow's milk if desired)
2 cups (1 pint) fresh blueberries

In medium bowl, stir together spelt flour, oat bran, wheat bran, baking soda, and salt. Add soy milk and stir until completely combined.

Heat a frying pan or griddle on medium-high heat and coat with cooking spray. Using 1/4 cup, measure onto hot frying pan or griddle.

When the edges of the pancakes appear dry and bubbles are forming on the surface, flip the pancakes and cook other side until golden brown.
