Healthy Desserts: Decadent, Chocolate Holiday Cake Too Good to Believe!

Have Your Holiday Cake and Eat it Too!

Chocolate cake is always a favorite holiday dessert and I call this holiday cake, Whoo Hoo Chocolate Cake. You can have your cake and eat it too. This dessert is healthy and delicious so add this holiday cake to your holiday baking menu and for healthy desserts throughout the year.

Whoo Hoo Chocolate Holiday Cake

¾ cup unsweetened cocoa powder
¼ sweetener (diabetics can use stevia)
½ cup boiling water
1 pkg. (16 oz) angel food cake mix
1 ¼ cup water
1 Tbsp. instant coffee powder
1 ½ cup skim milk
1 pkg. (11/3 oz) whipped topping mix
1 pkg. (1.4 oz) sugar-free instant
chocolate pudding mix

1.Preheat oven, 350 degrees. Line 10X15 inch jelly-roll pan with waxed paper. Whisk cocoa, sweetener and boiling water. Cool to lukewarm.
2.Prepare mix per package directions, using 11/4 cups water plus add cocoa mixture. Spread batter evenly in pan. Bake 20 minutes or until top looks dry. Invert onto large wire rack. Remove pan and paper. Cool.
3.In medium bowl, dissolve coffee in milk. Add topping and pudding mixes. Beat on low speed until moistened. Beat at high speed until soft peaks form. Chill 5 minutes.
4.Cut cake crosswise into thirds. Cover each layer with topping. Stack; chill 2 hours.

Chocolate Syrup

It's always fun to dribble chocolate syrup on the dessert plate before putting the slice of cake on top. Braum's has a sugar free chocolate syrup. Alternate chocolate dribbles with caramel syrup dribbles for an additional festive touch.

Optional but adds calories: Raspberries, ground nuts, toasted coconut or cherries across the top. Spray whipped cream and add a sprig of mint.

Whipped Cream

What's a holiday cake without whipped cream? Adding tofu whipped cream adds protein to healthy desserts while still tasting great.

½ pound tofu
2 teaspoons vanilla
1/8 teaspoon stevia or other sweetener
1 tablespoon lemon juice
a few tablespoons, coconut milk, almond milk or soymilk

Drain tofu and rinse. Combine with vanilla, stevia and lemon juice in food processor or blender. Add coconut milk, enough to make a smooth consistency. To make stiffer, add agar from health food stores. Refrigerate separately or on top of cake slices.

Serve plain or with toppings such as jam, pie filling or toasted coconut. Can also be used on pumpkin pie, pecan pie or any holiday desserts.
