Healthy and Easy Fall Vegetable Beef Soup

This soup is so chocked full of vegetables you will exceed the daily recommendation of vegetables. No need for V8 here! By cooking this in a crock pot all day the meat practically falls apart, making a little beef go a long way.

Ingredients

1 lb London Broil
14.5oz can corn
14.5oz can peas
½ lb fresh green beans
½ lb fresh baby carrots
1 medium white onion
4 medium potatoes
2 packets instant Au Jus
Salt and Pepper

1. Cut London Broil into 1 inch cubes. Add to crock pot.

2. Wash and cut green beans, baby carrots, white onion and potatoes into bite size pieces. Add to crock pot

3. Strain and rinse corn and peas. Add to crock pot.

4. Prepare both Au Jus packets according to directions for one packet only. Add to crock pot. Add additional water as needed to cover contents.

5. Cover and cook on low for 8 hours. Salt and pepper to taste.
