Healthy, Easy, Quick Oven Pancakes

The Recipe that Lets Us All Eat Pancakes Together

Pancakes OH Boy! We have time for breakfast together. How many times have I heard that and imagined all of us eating beautiful round pancakes hot off the griddle all three together? With one son and one husband, it never worked out that way. I would get theirs made and have some ready for me to eat, but they were ready for seconds. So I would wait to eat later. The pancakes must have been good, because they ate them right up, but inevitably when the second round of pancakes were ready to be eaten, they were ready to eat them. My cousin came to my rescue with a recipe for pancakes that were made in the oven. They used Bisquick and now I use reduced fat, or Heart Smart Bisquick. There are lots of variations on this recipe that I have included Even one that is good for dinner.

The basic recipe:

2 cups Bisquick (use heart healthy)
2 eggs (use egg beaters)\
1 cup milk (use skim)
2 Tablespoons Sugar
2 Tablespoons Oil (I use Canola)

Heat oven to 425. Grease a large pan (15 ½ x 10 ½ x 1). Whisk all ingredients together until well blended. Spread in pan. Add extra ingredients. Bake 14 to 16 minutes. Cut into squares and flip bottom side up on plate (it is more golden)

Extra Ingredients to be sprinkled on before baking. ¼ cup frozen blueberries, cherries, cut up peaches, or other fruit. !/4 cup cubed ham (small cubes) or 3 pieces of crumbled bacon. ¼ cup cheddar cheese. These work well in combination of a fruit and a protein.

The variation that I concocted that we use as a starch at dinner with a small amount of sour cream (no fat of course) is made the same way. I have listed the ingredients again since some are omitted and some have different amounts.

3 eggs ( use egg beaters)
4 Tablespoons chopped onion
4 Tablespoons oil (I use canola)
4 Tablespoons Mayo (I use reduced fat miracle whip)

Mix then add

2 cups Bisquick (heart healthy)
1 cup grated Parmesan cheese
1 teaspoon oregano
salt and pepper to taste

mix then add 4 cups of shredded zucchini squeezed dry
Bake 18-22 minutes and 425.

Really, really good. Although Bisquick has too much sodium for our taste so we don't add salt at all. Both recipes can be made ahead and reheated in the microwave easily. If you have to use a smaller pan than increase the baking time.
