Healthy Happy Valentine's Day Dinner Recipes

Valentine's Day is on its way, and love is in the air. Many individuals are trying to think of just the right method to let their special people know how much they love them. Making a delicious dinner for your sweetheart is an excellent way to show him or her that he or she is precious to you. Here are a few healthy dinner recipes that would be ideal for making for your sweetie on Valentine's Day: tasty herbed chicken, delicious mashed red potatoes, simply sautéed broccoli, and fresh fruit salad.

Tasty Herbed Chicken

1 lb. boneless, skinless chicken (you can use either breasts or tenderloins)

2 tablespoons olive oil

1 teaspoon dried basil

1 teaspoon dried oregano

2 cloves garlic, minced

Preheat the oven to 400 degrees. Mix the olive oil, basil, oregano, and garlic together in a small bowl. Take the breasts or tenderloins and coat them with the olive oil mixture. Place the chicken into a baking dish, and bake for 20-25 minutes at 400 degrees. Serve.

Delicious Mashed Red Potatoes

4-6 organic red potatoes, cut into small pieces with the peel still intact

7-8 cups of water (enough to cover the potatoes)

1-2 tablespoons butter

1-2 teaspoons of sea salt

1-2 splashes of organic low fat milk

Slice the potatoes into small pieces (approximately the size of quarters). Rinse the potatoes, and place them into a Dutch oven. Cover them with water. Bring the water and potatoes to a boil, and continue boiling them for 15-20 minutes depending on the desired consistency (you know that the potatoes are done when you can pierce them with a fork, and they are tender to your taste). Remove the potatoes from the heat, and mash them with a fork. Add the butter, sea salt, and milk, and stir the mixture until it is the smoothness that you and your loved one like. Serve, and enjoy.

Simply Sauteed Broccoli

1 package of fresh organic broccoli florets

1 tablespoon of olive oil

2 cloves of organic garlic, minced

3 spritzes of Bragg's Amino Acids

Heat 1 tablespoon of olive oil in a medium skillet over medium heat. To check the temperature of the oil, put two drops of water into the skillet; if they sizzle, it is time to add the broccoli and the garlic. Sautee the broccoli and garlic until the broccoli is tender and the garlic is golden brown. Remove from heat, and spritz the broccoli and garlic with the Bragg's Amino Acids. Serve immediately.

Fresh Fruit Salad

1 pound of organic strawberries, quartered

1 fresh organic pineapple, cut and sliced into chunks

1 organic Fuji apple, cut into chunks

1 container of whipped topping

Slice and prepare the strawberries, pineapple, and Fuji apple. Mix all three all together in a bowl, and if you want to give the flavors a chance to mingle, refrigerate for one hour prior to serving. Serve with whipped topping.
