Healthy Oatmeal & Fruit Pancake Recipe

If you're anything like me I love pancakes, however every time I eat them I end up feeling sick & lethargic all day! So this past summer I went on a hunt to find a healthier pancake recipe. I'll share with you my favorite, but I encourage you to play around with it and make it your own.

Healthy Oatmeal & Fruit Pancake Recipe

2/3 a cup of rolled oats

¾ cup of egg whites

1/2to 1 cup of fruit (see the note on fruit at the end)

½ tsp of sugar or sugar substitute

Cooking spray

MORE fruit

Yogurt if desired

  1. Use a blender or coffee grinder to grind the oats and add sugar to disperse it through the oats.
  2. Now using the blender add in egg whites, oat mixture, and fruit together. (see notes for tips on the fruit.)
  3. Coat the skillet or frying pan you're using with cooking spray (remember to spray every time you add batter.)
  4. Let them cook on one side until you see bubbles starting on the top, then flip!
  5. Once they're done cooking you can top them with whatever you want! However I recommend adding more fruit and yogurt as a healthy topping!

*Notes:

With this recipe you have the freedom to play around with it quite a bit. One day I ran out of eggs so I used milk instead, another time I had no eggs I used yogurt instead. The possibilities are endless but you should aim for the same texture and consistency each time so they'll cook right. You can add nuts, chocolate chips, white chocolate chips or even m&m's! This recipe makes enough pancakes for only two people max, so you may need to double or triple it for a family.

When it comes to the fruit I find berries work best as a topper and in the pancakes themselves, however bananas work just as well in the pancakes. Apples taste amazing in the pancakes, especially if you leave them in small chunks (peeled of course), however if you use apples I've notices they take a little longer too cook. You can also use fresh or frozen fruit, or even canned!
