Perfecting the Pancake Recipe

Pancakes are a breakfast staple. My kids eat them a few times per week with many additions such as chocolate chips and peanut butter candies. With them eating pancakes so regularly I found a few ways to make them healthier.

Basic Healthy Pancake Recipe
1 cup whole wheat flour
1 cup nonfat milk
1/4 cup egg beaters
2 teaspoons baking powder
1 tablespoon sugar
3 teaspoons vanilla

Preheat griddle to 350 degrees
Mix all ingredients together
Once griddle is hot spray with I Can't Believe It's Not Butter
Pour batter onto griddle
Turn when bubbles appear on top and cook for another minute
Serve immediately

To make them more interesting you can add mashed bananas, blueberries, apples or your favorite fruit to the batter.

Yogurt Pancakes
1 cup whole wheat flour
1 teaspoon baking powder
1 tablespoon sugar
1/2 cup nonfat milk
1/4 cup egg beaters
1/2 cup nonfat yogurt (plain or flavored)
2 teaspoons vanilla

Cook as written above

Consider adding 100% Orange Juice instead of the milk and instead of sugar you can add applesauce.
