Healthy Pancakes Recipe

Pancakes are an absolute must have in my household and they are very versatile so they never get boring. Pancakes are a very filling and hearty breakfast, lunch, or dinner depending upon your mood. As we start to settle into a new year that brings about a whole new set of standards for our lifestyles. I share a couple of pancake recipes that are actually healthy and taste great. So get that printer ready and the cookbook handy because these are some recipes you won't want to lose.

FEATHER LIGHT PANCAKES

1 ¼ Cup flour (can use whole-wheat)

1 Tablespoon baking powder

1 Tablespoon sugar

½ teaspoon salt

1 egg, beaten

1 Cup milk

2 Tablespoons olive oil

Fresh or Frozen Fruit (optional)

In a large bowl whisk together flour, baking powder, sugar and salt. In a small bowl combine egg, milk, and oil; then add to dry ingredients, stirring only enough to dampen the flour. Gently fold in fruit if desired. Cook on a hot griddle until bubbly on top then flip using your best judgment as to doneness.

GERMAN STYLE PANCAKES

Put 2 Tablespoon of butter into a cast iron skillet. Place the skillet into a preheated 400 degree oven. Let butter melt.

MIX:

3 eggs

1 Cup milk

¼ Cup sugar

Pinch of salt

1 teaspoon vanilla

1 ½ Cup flour (can use whole-wheat)

1 Tablespoon baking powder

Pour into the cast iron skillet and bake for 15 minutes. Cool and add fruit or any other desired topping. Enjoy.

Adding 2 Tablespoons of ground flaxseed to either of these recipes will give you an extra nutritional boost. These recipes are delicious and can be made at anytime of the day. Who said pancakes were just for breakfast?
