Healthy Protein Packed Blueberry Pancakes for Diabetes and Hypoglycemia
Enjoy Your Favorite Breakfast Without the Extra Sugar!
These yummy protein packed oatmeal blueberry pancakes are full of extra protein and fiber and less sugar.
You will need the following ingredients to make oatmeal blueberry pancakes:
6-10 large egg whites (preferably Omega 3)
1 whole Omega 3 egg
1 cup of oatmeal
Sugar free syrup or honey
1/2 cup flavored protein powder
1/2 cup of whole wheat flour
1/2 cup of blueberries
Extra virgin olive oil or no fat cooking spray
1. Put egg whites, egg, whole wheat flour, and oatmeal in a blender.
2. Blend till it is of a smooth constancy. Mix in blueberries.
3. Put olive oil in a frying pan.
4. Pour batter into pan.
5. Cook until side is golden brown, then flip pancake.
6. Add syrup or honey and enjoy.
This healthy breakfast recipe yields three large pancakes. You can double or triple the recipe to multiply the pancake breakfast fun, or make smaller pancakes for your kids.
Healthy Blueberry Pancake Variations
You can create your own variations on these pancakes. You can skip the blueberries for plain pancakes, or add some sugar-free chocolate syrup to the mix for light chocolate pancakes. Dollop some sugar-free whipped cream for a fun breakfast treat. Strawberries are a delicious substitute for blueberries, or for something different, you can add cinnamon and raisins for yummy spiced up pancakes.
Making Your Pancakes Healthy Pancakes
Oatmeal adds extra fiber and may help stave off bad cholesterol, while using whole wheat flour instead of white flour with sugar helps keep the pancakes full of complex carbohydrates instead of simple sugars. Limit unnecessary preservatives by using natural honey instead of store bought syrup, and use Omega 3 egg whites to cut unnecessary cholesterol and include good Omega 3 fats.
Adding extra protein through the use of egg whites and protein powders provides one of the essential ingredients needed if you suffer from diabetes or hypoglycemia. If you have diabetes or hypoglycemia, generally your doctor will recommend a healthy diet that is low in simple sugars and carbohydrates and high in protein, fiber, and complex carbohydrates.
Check the label of your protein powder to find one that is lower in carbohydrates. Some protein powders are meant to be weight-gainers and will have extra carbohydrates. Avoid these protein powders, and instead opt for a protein powder high in protein and low in sugar and carbohydrates. Choose a protein powder flavor like chocolate, vanilla, or banana when making your pancakes.
