1. Prepare fruits and veggies and store in containers or baggies for easy access. If this means you must buy them already prepared, sometimes we must do that. Baby carrots are great, grapes, bananas, cheese, apples, oranges and other finger foods are great to have ready to eat.
2. Buy some Jiffy muffin mixes so older kids can easily and quickly make muffins.
3. Make or buy pasta salad with a variety of veggies mixed into the salad. Kids usually eat pasta salads.
4. Mac and cheese seems to be a favorite of most kids. Have several boxes on hand. Teach them how to make it in the microwave.
5. Brown a couple pounds of ground beef at one time. This can be used for sloppy joes, maid rites, tacos and a variety of dishes with just a few seconds in the microwave.
6. Have cottage cheese, tuna, and canned chicken on hand. These can be used for a variety of menus.
7. Hard boil a dozen eggs and have them peeled, ready to eat, in the frig.
8. Buy a couple choices of cold cereal. There are some times, either for a bed time snack, breakfast or sometimes even supper, where a bowl of cereal and fruit will work out just fine.
9. Sometimes you just have to go through the drive in. Some kid choices include: Burger King - macaroni and cheese, burger shots, and apple juice. McDonalds offers a honey mustard snack grilled snack wrap, a small hamburger, fruit and walnut salad, fruit and yogurt parfait and apple dippers. Wendy's offers a baked potato with broccoli and cheese, small hamburgers or a small chili. You might also try the mandarin orange slices and a light lemonade. These are only suggestions, you may try subs or tacos. Low fat chocolate milk also seems to be a favorite of kids.
10. Ask kids to help you prepare food. Often if they've helped, they will be more eager to try something new and different.
Good luck families! Everyone is busy and budgets are tight. At the same time we're all trying to eat more healthy. You may not succeed with every meal, but overall it can work!
