Healthy Recipes: Creamy Broccolli Soup

This is a broccolli soup that I absolutely love to make. It has a rich flavor, but it's also low in calories, and it's a great source of vitamins and minerals. I hope that you enjoy it as much as I do!

Ingredients

2 cups of potatoes, diced and peeled
1/2 cup diced carrots
1/2 pound fresh broccoli
1/2 cup chopped onions
2 stalks celery, chopped
4 cups water
2 tablespoons butter
1/2 cup whole-meal flour
1-1/2 cups fat-free milk
Cracked black pepper seasoned to taste
Lemon Zest seasoned to taste

Directions

Combine the potatoes, broccoli, onions, celery and the water in a large soup pot. Bring to a boil over high heat. Reduce the heat once the water is boiling, then cover the pot and simmer the mixture until the vegetables are tender. It should take about fifteen to twenty minutes for the vegetables to become tender. Next stir the butter into the soup mixture.

In a small mixing bowl combine the milk and the flour. Whisk the mixture together. Then add it very slowly into the soup pot, while stirring it constantly. Next, increase the heat to medium high in order to allow the soup to thicken, while continuing to stir the soup. It should take about five for the soup to thicken. After the soup has thickened remove the pan from the heat and serve it with lemon zest and cracked pepper to taste.

This soup serves 6 people.

    Damn, that sounds good! I'll have to substitute olive oil for the butter, but, yum, yum!
