Healthy Recipes Made with Extraordinary Eggs

During the holidays, families gather together to enjoy one another's company as well as delight in the joys of the season. However, throughout the rest of the year, it is often hard to find the time to reconnect with each other. Breakfast, particularly on the weekends, is one of those meals that parents and children can take to spend time together and enjoy a delicious, nourishing meal before rushing off to start another busy day. Two scrumptious recipes that are made with extraordinary, edible eggs are provided for any family's enjoyment. This author recommends using either eggs from vegetarian fed hens or local, fresh eggs if available.

Delectable French Toast

5 eggs, beaten

1/4 - 1/3 cup vanilla soymilk (the amount of this ingredient depends on how much soymilk that you want to include in your eggs)

6 slices of whole wheat bread

1-2 teaspoons of butter or olive oil, depending on which you prefer to use

Crack eggs open and place into a bowl. Take a fork and beat the eggs until the yolks and whites are well-blended. Add the soymilk to the eggs.

While preparing the egg-milk mixture, heat a frying pan over medium heat. Test the readiness of the pan by putting a drop or two of water into the pan and see if it sizzles. If the water sizzles, add the butter (if using olive oil, add it prior to heating the pan).

Take a slice of bread and dip it into the egg-milk mixture. Be sure and coat both sides of the slice, and then, place the slice immediately into the heated pan. Cook for 2 minutes and flip over the slice. Cook for two additional minutes. The French toast is done when both sides are golden and lightly browned.

Serve immediately with butter and maple syrup, or eat as cooked.

Yummy Breakfast Wrap

6 eggs, scrambled

3 tablespoons of soy bacon bits

1 cup of shredded cheddar cheese

1 tablespoon of low-fat mayo

6 whole wheat tortillas

Take eggs and crack and beat in a bowl. Once eggs are well beaten, add bacon bits and cheddar cheese. Place the egg mixture in a preheated pan, and cook for 3-4 minutes on medium heat. Stir the egg mixture frequently to keep it from sticking to the pan. If desired, add 1 tablespoon of butter prior to placing the egg mixture in the pan.

The egg, bacon, and cheese mixture is done when the eggs are a lovely golden color and the cheese is melted. Serve in whole wheat tortillas, and if desired, add a little low-fat mayo onto the tortillas.

These breakfast wraps are also delicious when served with salsa.
