1 egg, 4 egg whites
1 whole wheat tortilla
1 oz. low fat cheddar cheese
1 chicken or veggie sausage link (chopped up)
chopped green pepper and onion, 1/4 cup each
salt and pepper

Saute the green peppers and onions in a little water (use a nonstick pan). In a separate pan, scramble the egg and egg whites and add in the cheese, sausage, onions, green pepper, and salt and pepper to taste. Cook until the mixture is firm, then serve in the tortilla (warm it first in the microwave for 20 seconds). This delicious breakfast has 350 calories.
