Healthy Meals for Businesswomen

In our fast-paced society, some may think that it is difficult to eat a healthy meal plan. Making healthy meals for businesswomen is even more important than ever. Here are some tasty and healthy recipes I enjoy as a working woman.

Chicken & Veggie Rice Medley

2 carrots, chopped and peeled

½ broccoli spears

1 small onion, sliced and skin removed

5 asparagus spears

½ cup uncooked rice

1 chicken breast, skin removed

soy sauce to taste

Cook rice according to package directions. Set aside.

Place chicken into steamer basket. Put pan over medium heat. Steam for about 10 minutes. Chicken should be partially done. Add veggies. Steam until done, only about 7 minutes. Test for doneness by poking with fork.

Place rice onto serving plate. Add steamed chicken and vegetable mixture. Mix thoroughly. Add soy sauce to taste. Enjoy!

NOTE: For vegans or those not eating poultry, simply substitute your favorite source of protein. This healthy recipe for working women is quick, easy, and tasty!

BALSAMIC SHRIMP CHOP CHOPSALAD

This recipe will help the busy businesswoman eat and enjoy a healthy meal in a quick, efficient manner.

1 carrot, grated

1 cucumber, unpeeled and diced

¼ cup water chestnuts, diced

1 tomato, chopped

1 cup broccoli flowerettes

lettuce, dried and chopped

1 medium avocado, peeled and chopped

2-3 T grated cheese, of your choice

1 hard boiled egg, shelled and diced

2-3 T balsamic herb dressing,

1 cup shrimp, cooked and peeled

When ready to enjoy a healthy meal, simply combine all ingredients in a large bowl, or on a serving plate. Add balsamic herb dressing for a delightful, quick, and healthy recipe for working women. Mix thoroughly to evenly distribute dressing. Adjust amount as needed. Serve with crackers.
