Healthy Salads for the New Year

Crunchy and Delicious Vegetable Salad

Crunchy and Delicious Vegetable Salad has been part of our diet for the past two years. I have lost more than 35 pounds in the last six months with this part of our diet. My family and I have had this salad on our table three times a week. It is filling and use can use a sugar substitute instead of regular sugar to dilute the tartness of the vinegar. The great thing about this salad is that the ingredients can be substituted based on taste.

Ingredients:

½ head of cauliflower

½ bunch of broccoli

1 onion

2-3 carrots

½ cup of raisins

½ cup sunflower seeds

Dressing:

½ cup of Miracle Whip

½ cup of sugar

¼ cup of white vinegar

Bacon Bits

Description:

Chop the cauliflower, broccoli, onion and carrots in very small pieces. Mix together with raisins and sunflower seeds. Mix together Miracle Whip, sugar and vinegar and stir into vegetables. Sprinkle bacon bits over the top.

Chris' Scrumptious Chicken Salad

Ingredients:

2 cups of cut-up chicken

1 ½ cups of pineapple tidbits

1 ½ cups of mandarin oranges

¾ cup of finely chopped celery

1 cup of uncooked pasta (cook until pasta is done)

Dressing:

½ cup of whipped cream

¼ cup of fat free mayonnaise

¼ cup of sugar

¼ tablespoon of lemon juice

Description:

Drain the pineapple tidbits and mandarin oranges well.

Cook the pasta and then cool!

Combine all of the ingredients, add the dressing and mix well.
Chris' Spring Salad

A delicious mixture of veggies and pasta.

Ingredients:

  • 2 boxes of ring macaroni
  • 2 cups of chopped cucumber
  • 2 cups of chopped carrots
  • 1 cup of chopped onion
  • 1 cup of chopped green pepper
  • 1 cup of chopped celery

Dressing:

  • 1 cup of Miracle Whip
  • ½ cup of sugar
  • ½ cup of white vinegar

Description:

  • Cook the macaroni as directed on the box then let cool. Chop
  • Chop all of the vegetables and add to the macaroni
  • Mix the dressing together and mix all together

Tip: This salad is best made 24 hours ahead
