Healthy Shrimp Cobb Salad

This is a great, healthy lunch for a busy day. For diabetics, the exchange values for this recipe are:

2 vegetables, 3 lean meats, 1 fat

Each serving has 273 calories.

Ingredients:

3 cups lettuce

5 cherry tomatoes

1/4 cup sliced cucumber

1 hard-boiled egg, sliced

5 cooked peeled shrimp (31-40 per pound)

Freshly ground pepper to taste

2 tablespoons diet blue cheese dressing

Combine all ingredients, toss with the dressing, and serve.
