The first thing to figure out is a strategey for foods you should avoid and others you can enjoy, Dr. edlund gives the following tips: "Humans need proteins, fats and carbohydrates to survive and we appear to do best when eating a large variety of foods. We evolved eating lots of whole fibrous foods. Fiber and plant cell walls smooth out insulin rises and speed food throught the digestive system perhaps reducing cancer risk." p.84. Also, "Foods with high quantities of folate and B vitamins lower a substance in the blood called homocystine, which can be as large a risk for heart disease as cholesterol." p. 211

Orange Fruit Dip

1 ½ cups cold milk

1 six ounce can frozen orange juice concentrate, thawed

1 package instant vanilla pudding mix

¼ cup sour cream

Assorted fresh fuit

In a bowl whisk together milk o.j. concentrate, and pudding mix for two minutes. Let stand for two minutes or until soft-set . Whisk in sour cream. Cover and refrigerate for at least four hours. Serve with fresh fruit.

BLACK BEAN DIP

1 can black beans
1 med ripe tomato, diced
1/4 cup jalapeno slices (pickled are best for this dip)
1/3 cup salsa
1/2 cup shredded cheddar cheese
1 bunch green onion - diced
sour cream
1 tbsp cumin
1 tsp chili powder
salt

Heat beans over the stove; add cumin, chili powder, and just a pinch of salt. Once the beans are heated through, move to an oven-safe bowl. Top with cheese. Use broiler setting in the oven to melt the cheese.

Once the cheese has melted, top with salsa, fresh tomatoes, jalapeno, and sour cream. Garnish with diced green onions. Serve immediately with tortilla chips.

Makes enough, as an appetizer, for 3-4. "
