I've Got Balls

I've always eaten what I wanted. Luckily, I normally like relatively healthy foods...except for the coffee and cigarettes (which I smoke not eat.) Little by little, my life partner has decided that he's not a steak and potato kind of guy any more and our meals went from each of us having a steak, to sharing one and finally very little if any meat on the table. We've been eating out of the garden and this caused a problem.

Despite the fact that the only part of me that gets exercise is my fingers, I'm still having problems keeping weight on. You read that right. I've always burned calories faster than a racehorse. At one time in college, I had to track my food for a nutrition class. Since I was under stress, my calorie intake needed to be higher because I lost weight faster. I was eating over 5000 calories a day and losing weight. My 5'8" frame didn't look fit at 110 pounds. My new, almost raw diet now caused the same problem. I had to find a way to supplement calories, besides the extra cookies at night. That's when I remembered, "balls".

"Balls" are an easy to make healthy snack I created when my daughter was little. We never called them anything else. I kept them in the refrigerator and when she wanted a treat, gave her a couple of them. They were good for her and didn't make her crave more sweets but satisfied any hunger for a while.

I mixed up a batch and when Mike arrived home, I announced. "I have balls."
He responded, "Yes you do. So who did you confront today?"
"No," I said. "I have balls in the kitchen."
"Oh, what did you tackle there?"
"No, I made balls."
He paused.
"I made balls. Want to try one."
He absolutely loved them. The recipe isn't precise. You can adjust the amount of honey to your taste. You'll find these simple to make healthy snacks won't last long in your home.

Balls
1/2 C Organic Peanut Butter (Regular peanut butter works too)
2 Tablespoons of honey
Blend the two together thoroughly. Sample a bit and see if it's sweet enough for you. Add more honey to your taste or more peanut butter.
Add enough wheat germ to make the mixture into thick dough, which holds shape.
Break of pieces slightly smaller than the size of a large gum ball or regular jawbreaker and form balls. If it's sticky, you need more wheat germ.
Sprinkle wheat germ on a piece of foil or paper plate and roll the balls in the wheat germ until coated. Store in the refrigerator and when your loved ones want a sweet and healthy snack, tell them, "I've got balls."
