Recipes for Turkey and Chicken that Are Healthy and Delicious !

Every Thanksgiving and Christmas I used to be faced with the same dilemma. How do you stuff the turkey and what stuffings are moist, flavorful, and do not dry out while cooking? Many are loaded with butter so here are two that have become firm favorites. One is an old recipe of my grandma and the other a quick and easy recipe that I use for Sunday lunch.

Grandma's bread stuffing: Enough to stuff a 12lb turkey
Loaf of sliced wholewheat bread (approx 30 slices)
1/2 cup olive oil
1/2 onion chopped finely
2 celery stalks chopped finely
2 eggs
1-2 cups low fat chicken broth
1/2 tsp dried sage
1/2 tsp dried thyme
salt & pepper

Method
Gran used to leave the bread out on the counter to dry. Next day, heat oil in a pan and saute the onion and celery. Add sage, thyme, salt and pepper and set aside.
Crush the stale bread either with a rolling pin or use a blender. You don't want it to be too fine otherwise it will get mushy. Add eggs and broth, mix well. If too dry add a little more broth. Add onion mixture to bread mixture and mix well with your hands. Stuff the turkey and close the opening with 1/2 lemon. Any remaining stuffing can be cooked in a shallow pan in the oven for 30-mins.

Easy stuffing recipe

One packet of Pepperidge Farm stuffing mix. I usually use the herb one. Make stuffing according to directions and too this add; dried cranberries that have been plumped in warm water for an hour prior. Or, 1 apple cored and chopped finely. Braeburn is a nice variety as it isn't too sweet. Or, combination of chopped walnuts, raisins and apple. All are flavorful and add a little something to an otherwise run-of-the-mill stuffing.
