Sweet Smashed Potatoes
10-12 sweet potatoes, peeled
2 tablespoons heart smart butter with canola oil (Land O Lakes or I Can't Believe It's Not Butter)
2 green onions, finely chopped
1/2 teaspoon of ground cinnamon
1 cup 1% or skim milk
Dried parsley to taste
Salt and Pepper to taste
Boil sweet potatoes in a bit of salted water until potatoes are soft. Drain and put in a large bowl. Add the butter and milk. With a potato masher, start combining the butter and the milk until potatoes are almost mashed completely. Add the green onions, cinnamon salt and pepper and continue to mash until potatoes are smooth. For a creamier finish, add another half cup of milk. Finally add parsley. Serves 6-8 people.
