Healthy Vegetable Soup

FRESH VEGETABLE SOUP 1 can chicken broth
3 T chicken base
2 quarts water
1/4 tsp pepper
1/8 tsp salt
1 inch chunk ginger, peeled and crushed
2 bay leaves
8 large cloves garlic, crushed
2 stalks celery, thinly sliced
1/2 Bermuda onion, thinly sliced
1 large red pepper, chopped
12 baby carrots, thinly sliced
1 leek, thinly sliced
5 mushrooms, thinly sliced
1 scallion, sliced in one-inch piecesPut everything into a soup pot and simmer gently for 1-2 hours adding water as needed. This makes a light, refreshing, summer dish or first course.

For a more substantial meal, you can add a few pierogies or raviolis 10-15 minutes before serving by first bringing soup to a boil. Or this can be served over fresh noodles.

Season to taste, and remove from heat. Serve accompanied by toasted Italian bread spread with garlic butter and Parmesan cheese.

Ingredients for Carrot, Onion And Cabbage Soup Recipe

  • 4 carrots, medium size, peeled, sliced
  • ½ head cabbage, medium size, washed, shredded
  • 4 onions, medium size, peeled, sliced
  • 2 tablespoons butter
  • 5 cups boiling water
  • Seasonings to taste

  1. Put seasonings in the boiling water.
  2. Add all other ingredients.
  3. Boil for about 25 minutes.
  4. Then serve.

Broccoli Vegetable Soup

4 slices Bacon -- cut in 1 in. pieces
4 cups Sliced mushrooms
1 cup Chopped onion
1 tablespoon Minced garlic
1 tablespoon Minced fresh parsley
6 cups Chicken broth
3 cups Broccoli flowerets & stalks

1 cup Peeled and chopped tomato
1/2 teaspoon Thyme
1/2 teaspoon Salt (optional)
1/4 teaspoon Pepper
1 cup Coursely chopped spinach
3 tablespoons Parmesan cheese
In a heavy pot, saute bacon until crisp. Add mushrooms, onion, garlic and fresh parsley.
Cook for 5 minutes. Add broth, broccoli, tomato, thyme, salt and pepper. Cook on low
heat for 25 minutes. Add spinach and cheese. Cook for 5 minutes more.
