Healthy Vegetarian Brown Bag Lunch Ideas for Your Kids

We want our boys and girls to grow up happy and healthy. One way to ensure that they have all the nutrition they need is to provide them with well-made, nutritious lunches for them to take to school. The lunches listed here are nutritious and tasty. Use these recipes and you can have the peace of mind that comes from knowing your child is well-fed and healthy.

Nutritious Stuffed Pita Lunch

Your child will enjoy this easy to eat stuffed pita. Don't forget to put fruit and a healthy, low sugar drink in with this lunch.

Ingredients:

Pita Bread
1 avocado
½ tomato
¼ red onion
½ cucumber
1 cup broccoli
1 cup cauliflower
½ green pepper
½ red, orange, or yellow pepper
Shredded cheese
1 tablespoon olive oil
1 tablespoon lemon
Parsley
Sea salt

Directions: Take the pit out of the avocado. Dice the avocado, tomato, red onion and peppers. Cut the broccoli and cauliflower into small pieces. Mix all vegetables in a bowl. Sprinkle cheese and parsley into the mixture. Salt to taste. Open pita bread and stuff mixture into pita. Wrap and place in your child's lunch bag/box. Mix lemon juice and olive oil and put in separate container for your child to sprinkle on his/her pita

Serves: 4-6

Suggestions:

Use leftovers for a healthy afternoon snack or your own lunch. You can also use the leftovers in a salad for dinner.

Easy Vegetable Tortilla

This recipe is easy to make. Your child will enjoy eating this treat for lunch. Serve with a side salad and pineapple.

Ingredients:

Tortillas
Tomato
Broccoli
Cauliflower
Cheese

Directions: Place the vegetables in the tortilla as your child prefers. Sprinkle cheese in the tortilla. Wrap the tortilla and then grill or bake it until it is crispy on the outside. Let cool. Wrap and place in your child's lunchbox/bag.
