Hearty Pumpkin Waffles: A Tasty Treat for Autumn or Anytime

If you have a houseful of Thanksgiving guests, why not whip up a delicious waffle mix?

Have the batter ready and the waffle iron piping hot, and your guests can make their own breakfast while you prepare the turkey feast! Your home will soon be filled with the delicious autumn aroma.

First, gather these ingredients:

½ cup canned pumpkin
3 eggs (beaten)
1 cup milk
2 Tbsp. margarine (melted)

1 cup flour (sifted)
2 tsp. baking powder
½ tsp. salt
2 Tbsp. sugar
1/8 tsp. nutmeg

Next, begin heating your waffle iron.

If you have a houseful of folks, this would be a grand time to enlist someone's help for setting the table. Once the delicious scent of these pumpkin waffles begins to waft through the house, you can be sure a crowd will form in the kitchen!

Here are the mixing instructions:

In a large bowl, mix pumpkin, eggs, milk, and margarine.

In a smaller bowl, mix flour, baking powder, salt, sugar, and nutmeg.

Add dry ingredients to pumpkin mixture. Stir well.

Pour batter from cup or ladle onto hot, greased waffle iron.

Bake until steaming stops (about 5 minutes).

Serve with fresh berries, syrup, jam, or whipped cream.

Holiday hint:

I like to put the waffle iron on a side counter, out of the main kitchen traffic zone, and allow my guests to cook their own. This way, they can eat them immediately, as soon as they are ready, while I continue preparing the main holiday feast.
