Sometimes it is difficult to keep to healthy breakfast choices if you have diabetes, hypoglycemia, or other dietary restrictions. Recipes for hypoglycemia or diabetes often need to be low in sugar, high in protein, and high in fiber. Breakfast favorites like donuts, coffee, pastries, and croissants are often forbidden. Try these easy protein paced breakfast recipes next time you are hungry.

Hypoglycemia Breakfast 1: Veggie Egg ScrambleRecipe

This easy recipe can be used with any fresh veggies that you may have in the fridge. I like to add my homemade salsa for some spicy pizazz. Add leftover chicken or low sodium bacon or ham for extra protein. Packed with protein, this veggie egg scramble is great for the diabetic or hypoglycemia low sugar, high protein diet!

Ingredients for Veggie Egg Scramble
3 omega-3 eggs (optional - egg white only)
mushrooms
low fat cheddar cheese
homemade salsa (chopped tomato, pepper, and onion)
1/2 cup skim milk
extra virgin olive oil

Instructions
1. Coat pan with olive oil.
2. Scramble three eggs with milk.
3. Cook eggs on medium high.
4. Add mushrooms and salsa.
5. Add cheese.
6. Keep turning eggs until light and fluffy.

Hypoglycemia Breakfast 2: Banana Smoothie Recipe

A quick and healthy smoothie recipe that is great before a workout, when you are on the go, or as an accompaniment to a healthy breakfast.

Ingredients for Banana Smoothie
1/2 to 3/4 cup of skim milk
1 banana
2 tablespoons of natural peanut butter
Tray of ice cubes
Protein powder (optional)

1. Mix all ingredients in a blender.
2. Blend ingredients until smooth.
3. Drink as an accompaniment to a healthy breakfast or as a quick snack.

Hypoglycemia Breakfast 3: Protein Packed Polenta Recipe

A delicious breakfast variation to a favorite dish.

Ingredients for Polenta
1 cup of corn meal
1 1/2 cup of water
2 omega 3 eggs (optional, egg white only)
1/2 cup of low fat cheese, any kind
Extra virgin olive oil
1/2 cup of skim or low fat milk
Optional: pat of low sodium butter

1. Boil 1 1/2 cups of water
2. Add butter
3. When water comes to a boil, add milk and lower heat
4. Slowly add corn meal, stirring constantly.
5. Turn off heat and mix until cornmeal is thick.
6. Mix in cheese.
7. Fry eggs in olive oil and serve on top of cornmeal.
