Holiday Cranberry Relish

Great Easy Holiday Recipe

Nothing says holidays better than Cranberry Relish, and I have a great simple recipe that has been handed down through my family for years. It's real easy to make and makes a very attractive dish on your holiday table.

Begin preparation with a very large bowl that will chill easily. I prefer a stainless bowl because it chills faster than ceramic or clay bowls.

Dissolve the following in into 1 ½ cups of boiling hot water:

¼ cup of granulated sugar

1 (3 oz) box of Raspberry Jello

1 (3oz) box of Cherry Jello

Stir mixture well so that the gelatin does not settle in the bottom of the bowl.

Add 1 can (12 oz) of Sprite, 1 (8oz) can of crushed pineapple, and 1 (16 oz) package of frozen cranberry-orange sauce. I prefer Indian Trail Cranberry Orange Sauce.*

Once mixing is complete, chill until mixture is partially set. You can then pour all into individual dishes or into a festive jello mold. There are many shapes available for holiday table dressing. Refrigerate overnight or until jello is firm. Serves approximately 12.

Garnish with a light sprinkle of coconut.

*If you can not find Indian Trail Cranberry Orange Sauce at your local grocery or health food store, you can make your own cranberry orange relish.

Wash well, 1 package of fresh cranberries and grind together with 2 navel oranges. You can also add to this mixture a bit of the rind, and grind along with the cranberries and oranges. If you prefer it a little sweeter add about ½ cup of sugar a little at a time. Taste as you go and do not allow the mixture to get too sweet. If you are using this mixture in the recipe above there will be additional sugar added. Cranberry sauce should be tart but sweet.
