1/4 cup sugar
1 quart milk (whole)
1 teaspoon vanilla

In a saucepan, beat together eggs, salt, and sugar. Over low heat, stir in half of the milk and cook until the mixture is thick, stirring constantly. Remove pan from heat and stir in remaining milk and vanilla. Cover and chill overnight. Serve with a sprinkle of nutmeg and cinnamon.Tip
To make a lighter version, use 1% milk or fat-free milk.
