1 ½ Cups of flour
1 Cup of sugar
1 teaspoon of baking soda
½ teaspoon of salt
Mix dry ingredients in large bowl and sit aside.
1 15 oz. Can of pumpkin
2 eggs beaten
½ Cup of olive oil
½ Cup of water
½ teaspoon of nutmeg
½ teaspoon of pumpkin pie spice
½ teaspoon of cinnamon
½ teaspoon of allspice
½ Cup walnuts
½ Cup of raisins
Mix wet ingredients, spices, walnuts, and raisins in a separate bowl.
Fold dry ingredients into wet ingredient bowl.
Pour into a well-greased loaf pan. Bake at 350 degrees for 50 - 60 minutes or until knife comes out clean. Do not over bake. Do not double recipe. Mix all additional loaves separately.
Cool for 10 minutes and serve warm. Tightly wrap remaining bread to keep fresh.
This bread is also fantastic at room temperature.
