Holiday Leftover Turkey Soup

Here's a great soup recipe to use with that leftover holiday turkey!

Turkey Soup

1 turkey carcass
1 bay leaf
4 cans chicken broth, plus water
3 stalks celery with tops, coarsely chopped
1 onion, diced
5 carrots, diced
1 can corn
1 teaspoon salt
2 tablespoons Worcestershire sauce
1 package dry onion soup mix
1 teaspoon Cayenne pepper

Place turkey carcass in pot with chicken broth, bay leaf, and enough extra water for soup. Simmer for two hours.

Remove carcass. Strip meat from bones and add to broth. Add remaining ingredients and bring to boil, immediately reduce heat and simmer 1 hour or until veggies are tender.

Leftover green beans can also go in the turkey soup!
