Holiday Recipe Guide for Healthy Vegan Eggnog: Alcoholic and Non-Alcoholic

We love eggnog during the holidays. But eggnog is listed as a cautionary food in terms of health and contamination because it contains raw eggs. My vegan friends have got the right idea with their egg, milk and dairy free recipes. Here's my vegan eggnog. Vegan eggnog is perfect for people who suffer allergic reactions to eggs. Vegan eggnog is a high protein, low-fat drink that is delicious and festive, without the alcohol. The key flavor ingredient in eggnog is nutmeg and a little vanilla, so basically, flavoring any milk substitute with nutmeg will give you the taste of eggnog. This recipe is kosher as well.

Vegan Eggnog (non-alcoholic version) In blender, combine:

One package Nasoya Silken Style Creations tofu

Two cups almond milk, Silk (or other soy beverage) or Rice Dreams (or other Rice Milk); I suggest avoiding the double dose of tofu mixed with soy milk. Choosing almond or rice beverages will give a sweet, creamy taste, particularly if you choose the vanilla flavors. If you are counting your carbs, choose almond milk as it's lower in carbs.

One third cup Sucanat, Florida Crystals (or other evaporated cane juice) or agave nectar; agave nectar is an excellent liquid sweetner and blends well.
two teaspoons vanilla

One teaspoon nutmeg

Several dashes of salt

Ice (optional)

Refrigerate holiday nog.

Vegan Eggnog
(version with alcohol) May be served at room temperature, chilled or on the rocks.

Cut back a little on the sweetener and add one shot of brandy or rum or vanilla liqueur to your vegan eggnog. You can also add vanilla liqueur for a sweeter taste. Cut back on the sweetener and vanilla if you add vanilla liqueur. Adjust vanilla and sweetener to your own tastes. Kahlua Vanilla, Vanilla Royale, Navan, Continental, Dr. Mcgillicuddy's and French Kiss are all well-known brands of vanilla liqueur or vanilla schnapps as it is also called.
