Holiday Treats: Rocky Road Cake Bites

Ingredients

Serves 20
1 Box Chocolate Cake Mix
1 Can Chocolate Fudge Frosting
1 Bag Mini Marshmallows
1 Package Chocolate Candy Coating or Almond Bark
As Desired Chopped Nuts

Bake the cake according to directions on the box. Cool slightly.

Crumble the cake in a bowl with the entire container of frosting. Mix until it has an almost batter consistency.

Place the mixture in the refrigerator for an hour to firm.

Use a spoon to create bite sized balls of dough around one miniature marshmallow. Place the balls on a cookie sheet and stick in the freezer for an hour.

Heat the almond bark according to package directions. Dip each of the cake balls in the almond bark.

Sprinkle each cake ball with chopped nuts. Dry completely on a piece of waxed paper.
Tip
The key to the whole recipe is getting the batter cold to allow it to hold together better.
