Holiday Turkey Meals of a Different Kind

Try these recipes to spice up Thanksgiving for your family. They offer a way to serve something different yet tasty and very colorful. These dishes are as pleasing to the eyes as they are the belly and they are robust enough to fill you up just as much as the traditional bird and fixings.

Turkey Salad with Curry;

1 1/2 cups chopped apple, 1 garlic clove roasted peeled and diced, 1 cup low fat sour cream, 16 ounces baked white turkey chopped, 1 cup mayonnaise, 2 to 3 teaspoons curry powder, 1 cup chopped celery. 1/2 chopped onion.

Combine the curry powder, sour cream, mayonnaise and turkey in a large bowl. Stir in the rest of the ingredients. Chill thoroughly before serving. A side dish of cranberry sauce adds a tangy sweet taste to compliment this treat. Some warm Mexi-Cali cornbread slathered in real butter also adds color and texture to this meal.

Some drink suggestions; Ice cold Tecate beer with a twist of lime or chilled bottles of Jones apple flavored soda.

Mexican Turkey Casserole;

1 diced Vidalia onion, 1 small sliced green pepper, 1 small sliced red pepper, 2 pounds of baked shredded turkey both white and dark meat, 1 medium bag of regular Doritos or tortilla chips, 1 can cheddar cheese soup, 1 can cream of chicken soup, 1 can cream of mushroom soup, 1 cup whole milk, 1 can of diced tomatoes, 12 ounces of diced green chili.

Bring soups to boil and add chili, milk, peppers, tomatoes, and onion until all is thoroughly heated. In a large casserole baking dish layer turkey, Doritos, and soups. On top layer sprinkle fresh cilantro and bake at 325 degrees for one hour. Let it rest but serve while still very warm. A side dish of Flan for desert will complete this spicy meal.

Some drink suggestions; chilled sangria wine or cold ice tea,weak sweet and a twist of lemon.
