Although it's available at the store, home-made hummus takes just five minutes to make. It's an impressive pot-luck offering or a useful take-to-work lunch option.
Hummus
1 can chick peas, drained, reserve the liquid
½ c. tahini (Greek tahini is best)
1 (or more) cloves of garlic, crushed
3 T. fresh lemon juice
1 t. salt or to taste
Place all the ingredients in a food processor or blender. Blend until smooth. Thin with bean water, if needed. To serve, drizzle with olive oil and paprika and surround the bowl of hummus with warmed pita bread, cut into triangles, or crudites.
