Homemade Baked Potato Soup

A large bowl of thick and creamy Homemade Baked Potato Soup is delicious on a cold winter day. Made with potatoes, garlic, sour cream, green onions, bacon, cheese and butter.

Ingredient needed for Homemade Baked Potato Soup:
4 large baking potatoes
2/3 cup butter
2/3 cup flour
8 cups milk, you might need more to thin
1 garlic cloves, minced
1 cup sour cream
6 green onions, chopped
14 slices bacon, cooked till crisp and crumbled
2 cups sharp cheddar cheese, grated
Salt and black pepper to taste

Directions for making Homemade Baked Potato Soup:
Step 1: Heat oven to 350 degree F.
Step 2: Bake the potatoes until fork tender, about 1 hour to 1 hour 15 minutes. You can bake the potatoes beforehand.
Step 3: In a large Dutch oven or stockpot melt butter over low heat.
Step 4: Slowly blend in flour with a wire whisk until thoroughly blended.
Step 5: Cook the roux, flour and butter, until a very pale golden.
Step 6: Gradually add milk to the roux, garlic and season to taste, whisking constantly.
Step 7: Cut potatoes in half, scoop out the interior and set aside.
Step 8: Chop up half the potato peels and discard the remainder.
Step 9: When milk mixture is very hot, whisk in potato.
Step 10: Add green onion and potato peels.
Step 11: Whisk well, add sour cream and crumbled bacon.
Step 12: Heat thoroughly.
Step 13: Add cheese a little at a time until all is melted in .
Step 14: Season with salt and pepper to taste.
Step 15: Ladle into serving bowls.
This recipe make 8 servings.

Tips:
You can set aside a bit of the bacon, green onions and cheese to sprinkle on top.
You may use leftover baked potatoes
