Homemade Chicken, Pepperoni and Swiss Cheese Roll Ups- Recipe

Chicken, chicken, chicken. That is all I ever hear from my husband! He always wants to eat chicken, so it is a good thing that there is a lot that can be done with chicken. This recipe is easy to prepare, fast to clean up and has amazing flavor that will leave you wanting more! The recipe makes enough for four people to have one stuffed chicken roll up. You can edit the recipe if needed. For example, you might find it easier to roll the chicken if you use shredded swiss cheese instead of deli slices.

4 Boneless skinless chicken breasts, thawed
8 Slices of large pepperoni slices
8 Slices of thick-cut deli swiss cheese
Italian seasoning
Italian Bread Crumbs
3 Tablespoons of butter, melted
Parmesan cheese, shredded
1 Cup marinara sauce-any flavor works well

1.) Place each thawed chicken breast in between a sheet of wax paper and pound flat with a meat pounder. The flatter you can get the chicken, the better. Leave the flattened chicken breasts on a sheet of wax paper and sprinkle with italian seasoning.

2.) In a baking dish, pour the marinara sauce evenly in the bottom of the dish so that it is covered.

3.) Place two pieces of pepperoni and two pieces of swiss cheese on each chicken breast. You can also use shredded swiss cheese if needed.

4.) Using both of your hands together, roll each chicken breast up as tight as you can and place in the baking dish on top of the marinara sauce. Try to keep as much of the pepperoni and cheese inside of the chicken as possible.

5.) In a small bowl, combine the melted butter, parmesan cheese and bread crumbs. The mixture should have a thicker consistency. Set aside.

6.) Once all of the stuffed chicken breasts have been placed in the baking dish, top them with the butter mixture. Spread evenly over the top of each stuffed chicken roll up.

Bake at 350 degrees for approximately 45 minutes, or until the chicken is cooked thoroughly. Check on the chicken half way through cooking and drain any excessive chicken juices or pepperoni/cheese grease. To avoid food poisoning from undercooked poultry, always remember to use a thermometer to check the internal temperature and make sure the juices are clear. The tops of the chicken breasts should have a crunchy topping from the butter mixture. If the mixture is not as cruncy as you would like, place the cooked chicken breasts roll ups under the broiler of the oven for a few extra minutes. Because the broiler cooks very quickly, make sure to watch the chicken carefully so that the topping does not burn.

You can also make a larger portion of this recipe and freeze the remaining portions in freezer-safe bags for a later meal. Just double or triple the ingredients and freeze. You are able to freeze the stuffed roll-ups cooked or uncooked. However, if the chicken breasts were previosuly frozen and thawed, do not freeze them again.
