Homemade Desserts that Are Great Potluck Pleasers

More and more I find that when I go to a potluck people are bringing easy deli items or store bought desserts. My favorite dish to bring is some sort of homemade dessert. I laughed last time I brought this Pumpkin Dessert, I could hear everyone ranting, it was so good and "Wow, it is homemade!". We don't realize how many people don't have or take the time to bake anymore. I have put a couple of easy dessert recipes together that are sure crowd pleasers at any potluck. Make sure you take a copy of the recipe along, because you can be sure you will be asked many times for it!

Pumpkin Dessert

1 large can of solid pack pumpkin (or 2- 15 oz. small cans)
6 eggs
2 cups milk
2 cups sugar
2 T. pumpkin pie spice or cinnamon

Mix all ingredients together and pour into an ungreased 9 x 13 cake pan.

Topping

1 boxed cake mix, Spice flavor
1/2 cup, plus 1 T, room temperature butter

Mix together until crumbly then sprinkle over the top of the pumpkin mixture. Bake 1 hour. Refrigerate. Cut into 2 inch squares to serve. Top with non dairy whipped topping or whip cream.

Hawaiian Delight

1 pkg. (9oz) yellow cake mix
1 egg
1/2 cup water
1 pkg. (8oz) cream cheese
1 2/3 cups milk
1 pkg. (3 3/4 oz) instant vanilla pudding and pie filling
1 can (20oz) crushed pineapple, well drained
1 container (8oz) frozen whipped topping, thawed or 2 cups

1. Beat cake mix, egg and 1/4 cup water for 2 minutes on medium speed with electric mixer. Scrape bowl often. Add remaining 1/4 cup water and beat 2 minutes longer.

2. Pour into greased and floured 9 x 13 inch pan and bake in preheated 350 degree oven for 15 minutes or until cake tests done and is golden brown. Cool on rack. Do not remove from pan.

3. Soften cream cheese and beat until fluffy. Slowly add milk and beat until smooth. Pour in dry pudding mix and blend at low speed for several minutes until thickened.

4. Drain crushed pineapple thoroughly, until almost dry.

5. Spread thickened pudding over cooled cake in pan. Carefully spread pineapple over pudding layer. Cover with whipped topping. Refrigerate covered overnight.
